Monitoring · Digital HACCP
Callisto: Food safety records that write themselves.
Callisto monitors every fridge, freezer, cool room and hot box 24/7, escalates alerts until someone acts, and turns your team’s HACCP checks into records that are ready before the auditor asks.
- Web
- Android & iOS tablets and phones
- Handhelds
- TV wallboards
Callisto modules
Every module. One record.
Monitoring, checks, cooling, allergens, meals, reports and apps share the same sites, people and records, so what a sensor reads and what a cook records end up in the same report.
Callisto module
Monitoring & alerts
Live readings from every fridge, freezer, cool room and hot box, with alerts that escalate until someone acts.
- Realtime dashboard: reading, set point and device health for every point
- Amber and red limits with raise and clear delays to stop false alarms
- Alerts climb level by level by SMS, email, push, Teams and TV wallboard
Callisto module
Digital HACCP
Scheduled worksheets for cooking, hot holding, equipment, cleaning and deliveries, reviewed and signed off.
- Scheduled and on-demand worksheets on tablets and handhelds
- Probe readings go straight in; out-of-range readings ask for an action
- Peer checks and a reviewer’s passcode before a record counts
Callisto module
Cooling
Two-stage cooling timed by a probe in the food: 60 to 21 °C within 2 hours, then to 5 °C within 4 more.
- A probe in the food stamps the moment it passes 60, 21 and 5 °C
- Both stages timed; a late stage raises a timeout alert
- Every batch on the cooldown list, with its curve and a use-by date
Callisto module
Allergens & labels
Allergen worksheets with a second check, live traceability, food recall, and labels printed from the record.
- Allergen worksheets with a peer check and an AI second look
- Live traceability for each dish, from cooking to service
- Use-by and allergen labels, and e-ink labels at the servery
Callisto module
Meal management
Resident diets and IDDSI textures, meal ordering, the chef’s production forecast, tray assembly and intake.
- Each resident’s diet, IDDSI textures, allergens and assistive needs
- A pre-service allergen check and a production forecast by texture
- Tray assembly by room, then intake recorded after the meal
Callisto module
Reports & records
HACCP, temperature history, exceptions, calibration and allergen reports in PDF or Excel, on a schedule.
- A weekly compliance report: on time, late and not submitted
- HACCP, temperature history, exception and calibration reports
- PDF or Excel, emailed daily, weekly or monthly
Callisto module
Apps & wallboards
Web, tablet and handheld apps, TV wallboards that read alerts aloud, staff training and a help centre.
- Android and iOS tablet apps, with an offline-first edition
- Handheld app for CT’s own temperature probe
- TV wallboards that rotate dashboards and read alerts aloud
How it works
The clipboard, retired.
Sensors and probes do the logging. People only step in when something needs a decision, and every decision is kept.
- Measure
- Alert
- Act
- Prove
On paper
- Checks filled in at the end of a shift, from memory
- Fridge temperatures written down when someone remembers
- A freezer that fails overnight is found in the morning
- Cooling times guessed rather than timed
- Binders to search when the auditor calls
With Callisto
- Checks scheduled, done on a tablet or handheld and time-stamped as they happen
- Sensors read every fridge, freezer, cool room and hot box around the clock
- An out-of-range reading raises an alert that escalates until someone acts
- A probe in the food times both cooling stages
- Reports in PDF or Excel, scheduled to your inbox
Alerts that escalate
Nothing drifts unnoticed.
Thresholds, delays and escalation levels are set per monitoring point. Every level asks for a corrective action, so the record shows what happened and who fixed it.

Hardware
The devices behind Callisto.
Fixed sensors, cooldown probes and handhelds designed by our own engineers, with a gateway and a label printer, all feeding Callisto.
Standard Device B0
A fixed sensor for cold and hot storage, connected over LoRaWAN. View device
Cooldown Device
A probe that guides staff through every cooldown and records the whole curve. View device
Mobile Handheld
A handheld with a temperature probe for every check that needs a person. View device
CT Label Printer
Use-by and allergen labels printed from your menu, not handwritten. View deviceGetting started
Up and running, site by site.
Callisto is set up with our support and install team, then run by yours.
-
Plan each site
Sites, monitoring points, worksheets and the people who get alerts are set up in the platform with our support team.
-
Install the devices
Sensors, probes and the gateway go in and are paired with their monitoring points. Their settings are sent to them from the cloud.
-
Train the team
Staff learn the checks in training courses with videos and quizzes, and the help centre answers how-to questions.
Questions
Asked before every rollout.
What does Callisto monitor?
Fridges, freezers, cool rooms, freezer rooms and hot boxes, through fixed sensors. Probes and handhelds add cooking, cooling, reheating, hot-holding and delivery checks.
Who gets the alerts?
You choose. Alerts go by SMS, email, push notification, Microsoft Teams or a TV wallboard, and escalate to the next level of people if nobody responds.
Is “Digital HACCP” a separate product?
No. Digital HACCP is part of Callisto: the worksheets, cooling records, allergen checks and reports that sit alongside the monitoring.
Does it work without internet on site?
Sensors store readings when the network drops and send them when it is back, and an offline-first edition of the Android app keeps checks running at remote sites.
Does it work with our existing fridges and cool rooms?
Yes. The sensors sit on or beside the fridges, freezers, cool rooms and hot boxes you already have, and a probe on a cable can reach inside while the device stays outside.
What does a site need?
LoRaWAN sensors and cooldown devices connect through the CT Gateway, an always-on hub that needs power and an internet connection and also gives tablets and handhelds Wi-Fi. Standard Device A0 has its own SIM and needs no gateway, and the C04 cooldown device uses Wi-Fi.
